Why are the dailys all not to the very end? if its about score and time, why not make it to the very last boss?

Because they'll be much harder to certain characters, not to mention the Hard Mode difficulty. Do you really think everyone would want to get pass Mom - It Lives - Sheol/Isaac/Hush - Delirium/Mega Satan every day? In that case, I'm happy to finally achieve both The Marathon and Dedication, but I would still not like to have to play dailies through the end.

To add diversity. In my opinion, if I know that the run will end on Mom's Heart, for example, I can rush things, skip secret rooms in order to gain some time because it is somewhat easier despite the challenge's imposition. On the other hand, if the goal is Mega Satan, I do the opposite to garantee a victory.

More often than not they give you the opportunity to gain enough hearts to do the sacrifice room and jump to the end..
