Report a translation problem
So I uninstalled the DLCs, opened vanilla Rebirth, and went to the controller setup page in options>controls. There I clicked on the profile to remap and just took some pictures of where the different buttons appear on the screen (since my issue was, like you said, the page in AB and AB+ doesn't show the order of the buttons you have to map). Then I reinstalled the DLCs and, following the pics I took, mapped out the buttons accordingly. Heads up, the bottom two rows of mapping input options are null, as far as I can tell they don't map to anything and I'm not sure why they're there at all.
I'm sure yours worked too, but here's my workaround for people who don't want to dig through the .dat files in the game folder!
When I upgraded to a new Xbox controller, I started getting the unrecognised error.
I remapped the new controller, and could switch in the in game menu, but it would use the old pad as a default every time i loaded the game. It wasn't a huge issue, but it was annoying
Anyway, I tried Pavel's solution, and it worked for me. In the general controller setting I switched to default controls, and then back to Xbox. I clicked recognise controller for good measure.
I reloaded the game and now my new controller is the default option
