U can get away with a layout that doesnt make the heli go crazy for example:
Accelerate - Shift
Slow - Ctrl
Pitch up and down - mouse (vertical)
roll left and right - mouse (horiz)
yaw left and right - A and D
I noticed to make the heli go forward while pitching up and down or just keep moving forward is to accelerate (pressing shift for me but W by default) while doing so unlike battlefield that does it for you, its like driving a car you have to press on the pedal to go forward, so you need to keep pressing a button that is at a comfy place
This is what i found that best fits me because i also play war thunder, try it out and see if it fits you
