ACTUALLY unsolveable puzzle?

I'm trying to do Croaker's second puzzle but a thorough glance indicates to me it's actually LITERALLY unsolvable. He has all 3 gems and there is one open space. In one move I am supposed to somehow claim TWO gems (not just one) so that when he fills the open space on his turn, I win.

I watched GamExplain's "First 40 minutes of" video and when HE does the puzzle, the top right corner card claiming the second gem is a blue Beeto card, which makes a bit more sense, since that would mean Croaker starts out only owning 2 gems on the board and thus I'd only have to claim one to win. Why was that card changed to a red Zamby?
