It would enable things such as backing up your savedata to make certain achievements even easier, like for example "No Damage" where you have to finish a stage without getting hit at all.
You can already scam some achievements by backing up your savedata. Never losing a life through the entire game for example, although asking you to do it in one sitting would've been kinda overkill too so I can let that one pass.
One would expect the game to just set a variable/flag for "lost a life" to 1 and immediately save that flag on that savegame to bypass such overkill requirement while at the same time stay true to the achievement's challenge.
In the same way, you could scam several difficult sections with checkpoint saving, and going back to the world map is balanced in a way that makes this an awful addition without further tweaks.
It all boils down to "Should I go back to the world map and get back the money I lost at the expenses of losing any collectible I got? Or should I just go ahead, beat the level and keep my collectibles and forget about the money I lost?".
At the end of the day, it's a design decision, you cannot expect every game to adjust to your routine and sudden urges of closing the game, otherwise every single game in existance will need to save at every second. This game already got rid of tons of negative retro game tropes and as most of you know, is not a hard game really, nor it has long stages that would even justify such feature to be added to begin with.
In the end, I stayed & played through because I didn't wanna lose progress but it kinda is annoying when something like this happens & it could have been avoided but maybe there is a reason why they don't want progress saved in the stages.
If someone wants to cheat to get achievements, it's their own business, and no one else's.
Achievements exist for the enjoyment of the user, period. If the user wants to ruin the joy of getting an achievement legitimately by exploiting game mechanics, it's their loss.
Attempting to prevent that should never be done at the expense of other users' enjoyment.
There are more straightforward ways to illegitimately trigger an achievement anyway.

Maybe you're doing something fundamentally wrong without noticing.
No lie, I would love to have Health Regeneration even as a cheat code that deactivates achievements like the other codes. Ever since Health Regen came into play I always role play my character as an experiment, undead, drinker of the fountain of youth etc etc. I would love to play shovel knight as a person that not only lost his companion but also suffered a curse of undeath that is shared with Black Knight or something.
Kinda why I want a cheat for infinite ichor of renewal just so I can role play as that character to add extra flavor for my needs. Did the same with the glitch with the elixir glitch in the gamecube version of Wind Waker, added the hero's charm mask and the new game + clothing and I role played as a immortal pirate that needs to drink his "infinite rum" to keep his immortal body going.
PixelJakob makes a good suggestion. Sometimes you have to set down the game and do something else for a while, and it may be frustrating that the game makes you lose some progress when you do this. It makes the game hard to play casually, as you may have to commit to a half-hour of play in order to make any progress at all.
I was definitely feeling this when I got to the boss gauntlet on new game +. Who knows how long it could take for me to see this through? Should I give up, and have to play through the whole level leading up to here again tomorrow? Fortunately I eventually beat it.
This is not about making the game easier. The only way it could make the game easier is if you cheated by copying save files.
Leaving the system on overnight may give you that nostalgic feeling, but it's probably something the developers would willingly drop, given their other concessions.
However, since this feature does not exist, I do recommend that PixelJakob just quit the level and start from the beginning. Many levels start off slow and then ramp up the difficulty as you make progress, so you may get a better experience if you have that familiar portion to warm up on. It might also boost your confidence.
Also, if you're dying a lot, try using the amulet often, and retrieve your money with the fishing rod. Some situations are a lot easier when you find the right relic for the job.
The pause screen is well-behaved in that it doesn't emit any music or sounds when left alone (kudos to YCG's design on getting this fundamental convenience aspect right.)
