Blitz Mode helps you improve your skill with making specific foods.
KYC (Know Your Customer) Mode lets you practice making orders for specific customers so you can learn their quirks and preferences, and since it doesn't have BurgerBot, KYC forces you to make all of the food.
Puzzle Mode helps you see lines of ingredients, which is a helpful skill in the regular game for assembling food quickly. It also helps you see food as a set of ingredients which you can collect in whatever order is the most efficient.
Definitely, I'd say being able to look upon a complicated customer order without fear is a big help in the game! I'm not saying the dread will go away, at least it hasn't for me, but it will diminish as your confidence increases :-)
Oh my! I just finished all of the extreme modes and now I'm trying to work on getting 100 levels extreme'd. Going to be quite the challenge!
