I'm very sorry!
In almost all cases I know of, the graphics card is the decisive factor. Especially the VRAM (memory) of the graphics card.
The load on the VRAM increases with the graphics settings and every application you start.
The graphics are automatically set once at the beginning.
There is a config file in:
users\user\AppData\Roaming\Godot\app_userdata\Canvas of Kings
This can also be read by humans.
For some people only the window mode seems to work. Try setting is_windowed to true in the config file and restart.
Or delete the config file and restart my tool.

What kind of Mac are you using?
The first start can take longer because the shaders are loaded. Can't you find the folder or don't you have a Canvas of Kings folder?
Sorry to hear that.
As far as I could find out on the internet, the 2019 MacBook Pro has an Intel CPU (+iGPU) and maybe an AMD Radeon 5300M or 5500M. Unfortunately, I have little experience with this. I myself use a MacBook with M2.
My tool requires Vulkan. This is provided by Apple/MacOS via an additional software interface.
Can you update the graphics card(s)? The drivers are supplied by the manufacturer.
Can you choose whether to work with the Radeon or the integrated Intel graphics card?
A Canvas of Kings folder is created in the Godot folder. First shader files and then the config file are created in this folder.
If the folder does not even exist, then it is probably due to the graphics card. That's why you can't start it.
At the first start it may take a little longer because the shaders are loaded and created.
The folder path on macOS:
/Users/YOUR_USERNAME/Library/Application Support/Godot/app_userdata/Canvas of Kings
