B. Having the player that will be hosting the game Portforward, thus opening a network route that any other player (or players) can then use to connect to your server directly.

Both of these methods are quite roundabout, which is what makes playing non-local co-op so difficult. Though if you know anything about pre1.3 Terraria (which your profile would suggest you do), then these two methods would sound familiar if you've ever tried to play multiplayer in that game.
As for playing together, I just have one major question: Do you have a mic and Mumble/Skype to use? Playing in silence would make keeping track of each other and possibly strategizing difficult.
I don't know about the others, but I've had Risk of Rain out of my system for over a year now, though I appreciate the enthusiasm of browsing year+ old threads. ¯\_(ツ)_/¯

It does require a switch (or possibly a hub) and two or more UTP-cables. I will refer to them as UTP cables, but you may know them as internet cables or ethernet cables or whatever.
This only works when all the players are in the same room or as far apart as the cables allow.
I cannot guarantee that this works, however, it works for me and it works every time.
This may not work if both/all players are on a laptop, but I haven't tested this yet, so who knows. Try it out.
PROCEDURE
All players connect their pc to the same switch(/hub), and this switch/hub is NOT connected to anything else. Just a power cable and two or more UPTs.
The host player opens up start menu and searches "cmd". This wil open a small black screen known as the command prompt.
Type " ipconfig " in the command promt and press enter. You will get a list of internet-related information.
Find the subsection that says: Ethernet adapter ethernet. Here, find the line that says: Autoconfiguration IPv4 adress. It will say a set of numbers behind it (normally in the form of XXX.XXX.XXX.XXX). Write down this number on a piece of paper.
All players start up Risk of Rain. The host player selects Online Co-op -> Host online co-op. He does not care about IP adress given by Risk of Rain or whether it is visible or not. Port should be 11100. The host player is in the character select menu and waits.
Joining players now select Join Online Co-op and enter the IP adress they have written down on the piece of paper. Port should be 11100.
