2. Yes, you have to park a car to collect it (there will be a message at the top of the screen).
3. This is how saves work here - in case of death or game restart you spawn in the HQ nearest to the place where you stopped playing. Quick save is virtually useless.
That's a nuisance when you think you've quicksaved *sigh* (old game, I'll forgive it)
Maybe I should park the cars at the slaughterhouse, the other garages still say not collected.

When you park the car in a garage (with a wrench icon) and get out of it, then you've collected it. Took me a minute to figure that out, too.
You can't save during missions, once you've accepted them (well, you CAN, but...), so if you die you'll go back to the most recent checkpoint. If you exit the game, you'll have to go to the mission-giver and re-start the whole thing, regardless of where you saved it.
