To not include Nathan McCree's amazing compositions and the Unfinished Business levels by default on the Steam version is pathetic. Another reason the remaster is long overdue.
The only difference I can think of is background soundtracks continuously play non-stop while in PS1 and Saturn versions, it stops playing after it reaches to the end of the soundtrack up until a music cue plays. Then it starts again and ends.
The best thing to do is make background soundtracks play non-stop and add music cues.
I would prefer the option to not have PC background music playing as the complete silence added to the atmosphere when music was not playing on PSX/Saturn.
