I would also like it to be possible to make a choice in the game settings for the Start button on the gamepad, either it switches the graphics, or pauses like in the PS1 version. Otherwise, quickly switching graphics spoils the feeling of the game a little, and for new players it looks rather strange.

Not at all.
TR4-6 go straight to gameplay. TR4 starts off at teen Lara's life, which consists of all the "training" you need to know about. TR5 is a nonlinear storyline that are a part of the FMVs telling one story after another, and it fills in the ending to TR4. The FMVs mainly take place in one of the Croft manors.
TR6 is a completely different game and is a follow-up to TR4. Plot-wise, Lara did not return home, so there is no place to really explore. It was also a rushed production at the time, so the area that may have intended to be for training was closed off, and put in a similar way to TR4. All the events take place in different countries, so Lara was far from home.
Lara only makes a return to one of the manors by Legend.
