In this case I would go with GOG. I want to have DRM free version if there is the option. I bought all Core Design TR games on GOG for this specific reason.

Steam, I wasn't intending to get it day 1 but with 20% off, why not? I would've bought it on PS4/5 if it had a physical release but I'm not buying digital on there.

Steam I will never GoG.
I only buy games on Steam.
In addition there is a Tomb Raider I-III Remastered collector's card.

Steam had better prices than GOG in my region during the past few years, but that changed a couple of months after I pre-ordered the game.

I'm fine with both, if a game has achievements I'd rather pick the Steam version, otherwise I wouldn't mind GOG, as long as the prices are the same.
