EDIT: Now that I think about it, the simplest solution would be to add an option to toggle the Apex trait on and off, or if you have Realm of Souls, add an option that makes it so it simply kills everyone on the board instead of ending the game.
That way people who enjoy the extra challenge could leave it as is, while players who want a more casual Beast experience could have an easier time.
I mean, Bloodmoon has an option that lets you play without the Werewolf, so there may as well be an option that lets you play without Apex.
DOUBLE EDIT: Actually, I found a workaround - play with "Start with Beasts"and "Maximum Beasts" both set to 3 - if Virgil is one of the 3 starting monsters, start a new game.
It ain't perfect, but it's better than playing for 10-20 turns before realizing you're screwed :P
Seconded - a house rule to turn Apex off for Days That I Am Weak would be great.
