How to reset dungeons

I started a new character recently, and decided to grind for a while since the enemies seem to scale faster than my character, but I can't seem to find a way to respawn the enemies in the dungeon. I know it's possible because I replayed a floor of the dungeon once. Is there a way to quickly refresh a floor?

Die? The game will bounce you 3 floors up and repopulate with random monsters. It will NOT reset the main boss'es, shrines, statutes, etc. Oh yes, it will also repopulate with random gold

you can just go through the first dungeon gate again... thats what i do. i work my way down from floor 1 over and over again... instead of going through town portal and stuff, if u go through the main gate it resets all the floors. BUT, if your wanting to farm floor 42 or so.... you will have to fight all the way back down there again from floor one. but this is how i do it.

You can also go upstairs from the dungeon floor you are on. Just keep going upstairs until you find a populated floor. Be ready, because often there will be a lot of enemies right around the top of the stairs when you reach the upper floor.

Since I "cut my teeth" on an earlier version of Fate, I was surprised to find that I could now re-spawn dungeons without going all the way back to level 1. After finishing level 17, for example, I went back to town, went back to level 17, then took the stairs back to level 16. I found that it had repopulated with fresh "baddies" to fight, and that the treasure chests were now full. It only seemed to work if I went to town before I went back downstairs.

In your example, if level 16 was still empty, you could have just gone upstairs again to level 15 and so on until you find a populated level.
