If this value is $10 for example, one plus sign of volatility = ~5% standard deviation = ~$10 x 0.05 = $0.5, which means 68% of the time you will get between $9.5 to $10.5 and 95% of the time between $9 to $11.
For gambling activities the volatility is 500% standard deviation which means 68% of the time your -$10 spending will get between -$60 to $40 (and conversely 32% of the time above or below that range).
Note this would actually be 100 plus signs for volatility in the tooltip which is ridiculous so I cut it short in the display.
My actual playthrough was a get rich without ever working a job (including doing regular work in your own buisness), so even though I am in the second generation it was considerably less but I THINK I even won on that one try.
(too much going on so the notification on top got lost but I had more money after the try, not about 100k less)^^
