I haven't tried it but you're going to have skill into it very effectively and gear for it.

Daggers have a very high stam cost when blocking.

I would like to be able to play a fast dual wielder as well, something close to a "rogue".
Is is possible to build a rogue like character with sneak attacks like in Pillars of Eternity 1 and 2 ?

I would say I've seen uniques and suffixes that would be suited to rogue. Also I believe there is a ability tree for Rogue.

I'm personally going full wizard.

Yes but I'm worried rogue tree is only for ranger attacks (bow and guns ?)
Is there the sneak attack mechanic, like you deal more damage if the ennemy has debuff on him or if you attack him in the back, just like in PoE ? (And no it's not about stealth)

The ranger tree does have skills for improving one-handed weapons, damage against unaware enemies, crit chance, etc. that benefit you when using daggers.

That said, I think most melee focused players probably benefit the most from taking a combination of skills from both the warrior and ranger trees.

What kind of build would you do for that?
So you can definitely get an invisibility option in the ranger tree to disappear in combat. Dual weapons don't swing at the same time, but when alternating between them they go much faster than a single weapon would swing. And as stated above I've definitely seen some gear developed for a rogue playstyle.

Blocking will be rough, but you can invest in cheaper dodges and pick up parry. Parry is a block that's perfectly timed which will let you counterattack the opponent. I don't believe it causes the stamina loss you'd get from blocking a hit. But you can't block/parry with two weapons equipped...

You can also get things to make stealth damage more effective, increase critical hits, and up critical damage. You can boost one-handed weapon damage and power attacks for daggers, but that's not really unique for that weapon.

I'd love the sneak attack to be implemented in the game (patch or mods).
Maybe there are not as much debuffs types on ennemies to allow it like it works in PoE, but maybe sneak attacks on poisonned foes, things like that ...

It's weapon benefits are mainly for ranged or one handed (which I think applies to daggers even if you dual wield them), but you're not stuck to a single tree. Most likely from Ranger you'd want the cheaper evade, invisibility, boost to one handed damage and higher crit chance with warrior providing you extra crit damage (I think one of them also has a higher crit chance versus unaware enemies). I'd also considering dipping into the Wizard tree for the light armour penalty reduction (though you could go with Ranger or Warrior and medium armour) given two weapons can eat stamina quickly, even with cheap evades.
Combine with equipment and totems for high poison/fire/frost/shock accumulation on crits (be careful with frost though, electrified characters zap nearby characters which can get pretty nasty if it procs when you're in hand to hand), and possibly consider taking a bow or rifle (along with the ranger bonuses to ranged weapons) in your second slot for those times when you really just want to reach out and touch someone.
Should be an effective build - you're relying on evade to keep you out of trouble with fast dagger slicing in the hope of triggering crits as much as possible. Should also leave you with a few leftover skill points in case you want to get health regen or the pounce attack from the warrior tree.
