How often do merchants restock?

Every 3-4 days. Just head to your camp and exit, then re-enter. Do this three to four times and they should restock.

I think somewhat around every two camps, didn't test if you can just do two camps after each other and if they then have restocked their items. I just played a few hours between and they had restocked their items most often. it could also be every 2-3 days.
