Even if it weren't in early access, there would still be patches and any new DLC's dropping would also trigger patch cycles and break mods. so i'm not sure i see what you are getting at that's any different from an early access game to a released game.
Even released games can have game features that will be different and uploaded into a new patch. Support for a game doesn't mean it's fixed even after release if the developers feel there are improvements to be made, though the chances of a big change is smaller than it is in early access.
This is going to happen regardless until support has ended and the developers consider the game as developmentally completed or abandoned.

Not that it makes any difference to me but people want more and more realism but then want ageing turned off which stops realism pretty much in its tracks , Just my take on it and everyone is free to play how they want .
