Seven Heroes Cheat Sheet
There's not enough information here to warrant a guide, so I'll just make a post here. For anyone who's trying to completely 100% the game including getting the entries on every form for the Seven Heroes, as well as all the specifics on their encounters, here's a compilation of information I've managed to gather:

Other than Dantarg*, the Heroes will automatically upgrade to their 2nd form after you defeat your 4th Hero. I won't include Kzinssie because you're required to fight both his forms anyway.

Dantarg - You can only see his 1st form if you go to the Eastern Subterrane as Gerard. After that, he will almost always be in his 2nd form (I've seen a video where someone fought him starting in his 3rd form, but I don't know the requirements for that). Dantarg also has a "5th form" that can only be seen if you fight him in the Den of Umbrage. If you lose to him in your first encounter in the Eastern Subterrane, he will let you live and leave. His 3rd form onwards have a chance of dropping the Destroyer axe, and is the only way to get this weapon.

Bokhohn - Triggering the quest "The Fall of Cumberland" will force Bokhohn into his 2nd form, where he starts with his giant puppet, then merges with it in the 2nd phase of the fight. If you allow him to trick you in the cutscene before the fight and lose, then when you return to fight him again, your character will see through his trick.

Subier - Defeating Narwhal at Lake Wyringa will force Subier into his 2nd form. If you have a time skip before completing the quest "The Storm and the Sunken Ship", then after defeating Garon's Ghost, you will be forced into a fight with Subier right afterwards.

Rocbouquet - If you refuse her request as a male emperor in Eirunep Tower, she will attack you. If you lose this fight, she will charm you and force you to fight the Guardian at Eirunep Shrine. You can also clear both Eirunep Shrine and the Sunken Tower without speaking to her, and at the end of the Sunken Tower, you can speak to the Water Dragon for a little bit of lore.

Noel - You can speak to Noel without having to fight him. However, if you have already defeated Rocbouquet, you will not have that option and will be forced to fight him.

Wagnas - As far as I know, there are no special gimmicks or triggers. The only thing worth mentioning is that when you reach him at the end of the Floating Castle, if you say you are leaving, he will return you to the ground without fighting you.

Dantarg's forms are tied specifically to the number of Hiraga generations passed. There's a table in a Japanese wiki with what forms you can find at what Hiraga generations... Last form isn't exclusive to final dungeon either way, you just need to wait many many generations to beat him.

Dantarg can also be found in Southern Subterrane and in the Bardic Grotto in specific generations, and he also lets you leave if you lose to him in those locations.

Subier isn't a simple timeskip to have him appear in Sunken Ship. If you defeated Narwhal he always appears there. Otherwise, he appears if 16~18 Hiraga generations have passed since Garon's Coup (1st form in this case), and if 19+ Hiraga generations have passed since Garon's Coup, he appears on 2nd form in Sunken Ship.

Rocbouquet will also go to her 2nd form if you lose to her as a male emperor in Eirunep Tower, then change to a Female Empress or to Final Emperor.

Noel used to have an enraged form if you defeated Rocbouquet before talking to him. I dunno if this was translated to the remake. I need to do more testing. It's possible it is just an AI change instead of a change in both stats and AI.

I did defeat Narwhal in my previous playthrough, and Subier did not show up at the Sunken Ship.

Do you know what determines if Dantarg shows up in the other caves, or is that just info copied from the remaster?

I feel like trying to fight Subier in his first form is a chore…

Mmmmmmm... Interesting, this might have been changed, then... Weird, last I checked there was no change to this mechanic... How weird~

And Dantarg, the info is on a Japanese wiki, it's fairly different from what the original was... I honestly don't remember which specific section it was in though. Just throw it on google translate and go skimming through the links, you should eventually find a table with Dantarg's levels: https://kamikouryaku.com/romancingsaga2r/?%E9%99%A3%E5%BD%A2 (this is the Formations page, for the record. You essentially just need to take a while to start killing the heroes, really. As long as Subier is one of the early heroes, you'll find him in his first form.

I usually leave the heroes for last myself, so I never really have to fight his 2nd form.

You essentially just need to take a while to start killing the heroes, really. As long as Subier is one of the early heroes, you'll find him in his first form.

I usually leave the heroes for last myself, so I never really have to fight his 2nd form.

Thing is it’s tough to force his quests to come early.

Ah, well, I usually do Corsairs in either the same generation or the generation after I do Cumberland.

Garon's Coup should come in the next generation after that for as long as my timeskip is big enough.

And then Sunken Ship should come in the following generation if my timeskip is big enough again... And since I leave all heroes for last, I can easily have Subier be my first non-Kzinssie hero kill.

I have an update regarding Kzinssie, courtesy of SekaiHiroshi:

It's actually possible to defeat all 6 other Heroes before getting the Final Emperor (you have to leave Dantarg, Subier, and Noel for last). If you manage to pull it off, then when you switch to the Final Emperor, Kzinssie's letter of challenge will say he is waiting for you in Nazelle instead of the Sealed Cave, and his lines will change slightly when you reach him at the end of the Den of Umbrage.

I beat Dantarg first in the Eastern Subterrane, technically second (I had to fight Kzinssie in his mansion in Somon) and after several attempts he dropped the Destroyer axe.
