How to select Zero, Mars People, etc in lobby matches?
Even after enabling characters to All, I don't see them in the character select screen.

You have to hold L1 (Playstation Controller)/LB (Xbox Controller)/L (Switch Controller)/Keyboard J on Kyo’s row (for SNK) or Ryu’s row (for Capcom) for the characters

Thanks it works. Slight knowledge check compared to Magic Plus not hiding them.

Yeah Super Plus didn’t hide anyone, but it also caused names to be cut off due to the extra 4 slots for the normally unplayable bosses on Character select.

To be fair though, originally in the MVS/AES versions, you had to do directional codes to select the bosses, while holding the start button (as it'll go random select), then you would be able to select the boss that you wanted. (The only exception Shin Akuma and Serious Mr. Karate in the MVS version and Athena and Red Arremer, as they had no directional codes. Well, outside of hacks or other methods to select them, like Magic/Super Plus, lol.)

So to make it easy as possible, they used the bumper/trigger selection like the (PS2/Xbox) console versions to select them.

Yup, still a great QoL change to just hold bumper to select compared to needing a full Konami (SNK?) code to select. Just like selecting NEST Kyo and Flame Iori in 13.
