If you really can't beat the easy AI on your own try to play you and one AI vs a single AI first. Then if you feel ready increase difficulty of enemy AI - adapt your ally if needed. After a while you should be able to beat at least the easy on your own and then start getting up to the expert.
And for the beginning try to stay on HW1 race, Vaygr or Hiigaran and learn one. HW1 races are more or less equal while HW2 ones have some bigger differences.
In addition try to play HW1 vs HW1 or HW2 vs HW2, not mixed at first. Maybe even play against the same race.
In addition you could use no research and set high RU injections as well as high starting RU. AI is not the best at using hight amounts of RU, but this will at least need you to know what you are doing with all your RUs. ... If you try to counter BCs fith frigates or destroyers for example ... it won't work for a long time. (BC, Bomber, IonCannonfrigate, Capture, mines or Lasers Corvettes could be a solution for example) You need to get a basic idea of the ship conters.
If you want to increase the RU only for you ... you could mod a map to have better starting RU on your position and save it. That's the easiest solution. More complex would be to write a script that inceases only your income or decrease AI income in a Gamemode.
You would need BigDecrypter and UnfBig for that and a notepad to modify the files ... as well as some basic knowlage of coding.
In general I would say you should be able to handle it with my tips above.
