It will detect movement when you go to assign keys/axis, this can be found under Options, Controls,Plane Controls for things like pitch, roll etc. You'll see numbers, 1 2 and 3 simply click in the appropriate box and the game will detect it. You'll see other sections for different things, including engine and weapon controls.
The same menu is able to be opened when in flight via the ESC key, I usually fine tune things during Fly Now missions.

And yeah, control mapping is always a pain on any flightsim, Rise of Flight no less. Luckily on these old crates, there aren't that many important controls. If you're flying a fighter, these are the controls you want to worry about:
Engine controls:
- Engine on/off
- Throttle
- Radiator
- Mixture
- Engine Blip Switch (use it to temporarily cut the ignition on rotary engines)
Plane controls:
- Pitch (elevator)
- Bank (ailerons)
- Yaw (rudder)
Weapon controls:
- Reload weapons
- Shoot forward firing weapons
You can set them under controls/options in the main menu (or also during a mission). Just find the control you want to set, double click one of the fields, give the input you want to use, and accept.
Also, save the controls to a new file when you're done. The default file is overwritten each time there is an update, so you run the risk of having to set them again. Don't want that!
If an axis is reversed for you, go to responses, select it from the drop down menu, seelct 'invert', and accept.
Good luck!
