Yup, the Logitech Extreme 3D Pro is sufficient for this game. It was my trusty stick for 3 or so years.
In response to your other question, Rise of Flight has a smaller, but very active playerbase. If you're expecting 100+ players in multiplayer servers, you might be disappointed. But, if you're looking for a tight-knit community of pilots who are (for the most part) interested in keeping the game going, then Rise of Flight is for you! ;)

This is a good example. I suspect that they use TrackIR though I have no intention to get anything of that sort. If you could give me a general rundown of how to set that up that would be fanastic though I know I am asking a lot of you.

Yes indeed, it looks like they are using TrackIR in that video. Personally, I can't recommend it enough. It totally changed my gameplay experience and gave me the situational awareness to start winning fights. However, I understand that at approximately $150 USD, it is more than a little pricey.
If you're not doing TrackIR, you have 3 options to look around in cockpit.
1. Use the mouse to look around. This, in my opinion is the least-intuitive way to look around, as it is pretty hard to fly with a joystick while doing this.
2. Use snap views. If you have the Logitech Extreme 3D joystick, this is relatively easy. It has an 8-way hat switch that Rise of Flight will automatically assign to look around. This is probably the cheapest and most hassle-free way to look around in flight. 3. Use a different head tracking software such as FreeTrack.

I personally have never used it before, since I already own TrackIR and am perfectly satisfied with it. However, from what I've heard, FreeTrack can be a budget-conscious way (you only have to buy a webcam) to get a gameplay experience close to TrackIR. However, I can't vouch for its ease-of-use, having never used it before myself. If you are interested in this venue, definitely consider posting in the ROF forums and someone more knowledgeable than I will almost certainly be able to explain it to you. ;)

It looks pretty flexable ! Also to use your headset and voice commands, which is almost manditory for controlling flight simulator wing-mates... I use Voice Attack: https://www.voiceattack.com/
It is a very well programmed product, and has many aftermarket add-on modules for every kind of PC or MAC game or software. I recommend making laminated commend sheets to set in book -holders or wall clips, for quick reference to the right command, at the right moment...
Finally You can use ONLY JUST your PC Web-Camera for head motion... You do not need all the other gizmos, but its your call on that... I just found out about this option, so here you go...
