I tried what you said but still pulls in one direction (funny enough it was a hard right when I tried this time). I just immediately turn a hard left/right on the airfield as if someone held a key down/forced my joystick in one direction and it can't be countered at all. Everything else seems to work as it should, guns, fuel, throttle. Not sure what RM is but when I use [ and ] to turn it up down the sound of it changes but it goes silent when I turn it up.
Padlock view is default function key F8. You should be able to re-bind this key to any button on a joystick. Please take a look at this guide. The section on "Your Game Settings" should help.

When you first start the game it defaults to mouse control. Please make sure you go into the OPTIONS > GENERAL > CONTROL MODE and click the box for joystick control.
I'm not sure what your referring to about the "RM." The only RM I'm familiar with is the 2 letters at the top right of the display screen. The "R" refers to radiator and the "M" refers to mixture. If these letters show on the screen it tells you that your plane's radiator and mixture are automatically being controlled by the game. If you are new to RoF it is best to leave this feature turned on until you get the fundamentals of flying a plane (WWI) under control.
Please don't try to use a gamepad controller with Rise of Flight. If you look at the Steam Rise of Flight United page you will notice that it states that the gamepad is only partially supported. Also, Mouse control is available but, it was added as an after-thought. It is very marginal as a usable controller.
One way to tell if you control stick is setup properly is to start a mission on the ground and take an external rear view of your plane. (F2, then move the mouse around to see the plane from the rear). -- (F1) puts you back into the cockpit.
1. Move the joystick to the right: the left aileron should go down & the right aileron up. Move the stick to the left and the left aileron should go up & the right aileron down.
2. move the joystick toward you: the elevator should go up; stick away from you elevator down.
3. Move the joystick twist-handle to the right: the rudder should move to the right, turn the twist-handle to the left and the rudder should move to the left.
If any of these axes are reversed it would be necessary to "invert" it in the OPTIONS > Responses > Current Axis > Current Axis Setup > Invert box.
