If one of your armies is idle, keep it in a Stronghold that has the upgrade that reduces upkeep costs or in a keep that does the same. Higher level units consume less food so don't get your veterans killed and maybe give a point or two to upkeep reduction on high maintenance units like Knights (IIRC one of them can eat over a thousand units of food each season at low levels).
Food only became an issue for me when the ghost armies ran rampant and started decreasing the populations and it's ultimately not much to panic about as long as you have enough food to do recruiting at the start of each year.
