I dident do it on my first time finishing the game,
it made a big difference the seconde time.
You only need crossbow with poison.
My solution for beating him? Buy 40+ potions and bear through all the punishment with gritted teeth. There was little strategy to this boss, and because it's so long and has so much HP, you just need a huge supply of potions.
Also, as the others said, traps are useful, since they make him fall down, giving you a chance to deliver some free hits to him whilst he is getting up.
Apart from this boss though, the game is brilliant.
I don't know how warrior can beet it (parry is useless, breaking defense to). Middle tree gives u one chance do give him 3-4 hits (the jump attack). U can't counter his fast melee combo cause counter attack don't brake it (attack has 3 dodge points)... When he is in range mode u can just run... and dragon sequence is..... This game give u 3 paths but 2 of them are useless in the last battle.
I can see only one solution to this finale battle buy a loooooot of bolts to shoot or invest in fire power and mana potions. Range is the way.
