Right now every game is runnning just fine on my pc I am only having problems with two new release games which both happen to be running on unreal engine.
I might be wrong but i had the exact same thing and as soon as i replaced it it's all good
Try to reseat your GPU and check the cables. Also use Display Driver Uninstaller to 100% remove your Drivers and reinstall them after.

I went into my bios and found a setting that allowed extra voltage to be allotted to the cpu for "enhance" performance. I disabled this in the bios and havent had a crash yet.

Normally you are correct. However, this has been going on for a while. The error by unreal triggers this to read as a gpu error. It has already been confirmed it is the CPU on Unreals Community website.
Roughly mid 2023 - present,
Intel keeps releasing "fixes" to its micro-code but the issues are still happening especially to those who now need to RMA cpu's due to this issue,
One of the fixes intel even tried to get the moba manufacturers to underclock the cpu's in a bios update which would defeat the purpose of buying the ones we did.
There are plenty of sites you can see this on if you just google it.

Based on extensive analysis of Intel Core 13th/14th Gen desktop processors returned to us due to instability issues, we have determined that elevated operating voltage is causing instability issues in some 13th/14th Gen desktop processors. Our analysis of returned processors confirms that the elevated operating voltage is stemming from a microcode algorithm resulting in incorrect voltage requests to the processor.
Intel is delivering a microcode patch which addresses the root cause of exposure to elevated voltages. We are continuing validation to ensure that scenarios of instability reported to Intel regarding its Core 13th/14th Gen desktop processors are addressed. Intel is currently targeting mid-August for patch release to partners following full validation.
Intel is committed to making sure all customers who have or are currently experiencing instability symptoms on their 13th and/or 14th Gen desktop processors are supported in the exchange process.
