Question about classes/weapon combos
So I'm thinking of playing. How viable is great sword/dagger and staff/wand. I'm honestly thinking of these two but unsure really if what to expect. How do they fair in both pve and pvp?

both Combos are great to play and do well in Pve as well in Pvp, Greatsword / dagger is awesome in PvP,

Greatsword is a bane for people with skill issue, me included, cause if it lands on your naked ass (buff wise), it insta-kills you.
Thing is: it takes what seems like half-an hour, during which you're in hard CC.

So to the OP, seriously:

Greatsword is awesome with everything, cause if you land your stun, you're gonna Collision: Prone your target and go medieval on them with that big scary 2-business-days swing.
If someone did not manage to pop up a defensive spell (not necessarily THE defensive spell, but that is best), they're just insta dead.
It truly is one of the most frustrating things early on your pvp path.

As mentioned, that GS combo takes a good while, so if your teammates aren't sleeping, they CAN get you out of that predicament. I often move the GS guy off of my teammates in arenas with my Collision: Push or Collision: Pull mid their swing, seems like the best save, but people do it so rarely. Because of this skill issue, if you play Greatsword, you're gonna have quite an amazing time 1v1ing anyone. Pair it with daggers for even more lethality, as if you needed more. Most often people go Greatsword+SnS, cause they don't need another offensive weapon, GS is more than enough.

About Staff - Hands-down the best ranged damage dealing weapon there is. Insane versatility, can be configured for very effective AoE, so Staffs dominate most PvE events.
Incidentally, they also dominate PvP.
Top of PvP rankings is basically 90% Staff/Bow (Bow has an insane AoE Flash Wave covering two guilds worth of targets at a conflict boss event).

The only thing I feel is kinda missing on the staff is a kill-prepping hard CC like GS has. Staff has a root on your ice lance and an icy block petrify spell that freezes your target but doesn't allow to damage them. I guess people pair it with Bow so they can use the bow's root. There are also bows that significantly improve your attack range, so you can hit them while they can't hit you.

Truly, when looking at it, the game was developed since 2011. One would trust that the game design process of this magnitude would result in relationships between all seven weapons done in such a way, that there really isn't a bad combo.

See does sword and shield really lower your damage if you pair it with great sword? I thought about going that because I wasn't sure how easy it would be to actually survive in melee with any decent amount of people in a group pvp situation, that was one of the main things that had me consider going staff even though I really would like to play melee. How viable are daggers for your main damage weapon? If wanting to stay primarily melee would I be better off pairing them with something other than great sword?

SnS doesn't lower your GS damage, it just doesn't have much of the damage dealing potential on it's own, seeing as most of the SnS spells are defensive or CC.
You can carry the shield as the primary, so you will have the shield block chance when attacked while not executing your GS spells.

SnS complements GS really well, it's basically the main tank build in the game, as it offers great CC, great damage and great survivability. If there is a tank somewhere near the top of the pvp rankings it's SnS+GS.

Daggers are very viable as well, they have the classic rogue vibe, and they seem to excell at killing soft clothed caster targets, as the custom dictates.
They also offer stealth and shadowstep.

GS+Daggers are less tanky, but more bursty damage-wise than GS+SnS.

There are literally 3 melee weapons in the game, the remaining 4 others are ranged, so if you want to play melee, I'd say it's just a choice between GS/SnS or GS/Daggers.

I'd just play both while leveling and see how they feel and which ones you like better.

You can even level the skills for all of them a bit, I'd say up to blue 1 is basically free, as green books are very cheap to farm and make.

Later on you'll be getting 33 pieces of blue parchment per single contract, that dissolved to green parchment will be 495 pieces, which makes 99 green books. That's more books than it takes to level 2 skills to level blue 1.
Marind ore for these is basically everywhere, can be mined on the SkyWhale. These material also drop in Abyssal Dungeons a lot.

The thing with leveling different weapon skills while you're trying them is - every next tier (green -> blue -> purple) is exactly 15 times more expensive than the previous one, so raising one purple skill a single level is 225 more expensive than raising a green one, and the benefits often are like a 2-3% improvement on something.

Don't be afraid to try the different weapons, as with skills at Blue 1 you can do most PvE content anyway, even with unleveled weapons, and many do XD

Okay, so my other real questions are I know you get two weapons, does it matter really which is your primary vs secondary? Also I know you have skills for both weapons on your bar, do you just seemlellsly swap to the alternate weapon when using its skills? Is there a delay or time period you have to wait between swapping weapons?

The weapon you're currently holding in your hands applies it's stats to your auto-attacks.
Those stats are min and max damage, attack speed and range. So if you're holding a staff, your auto attacks will be ranged, while for daggers they'll require you to run up to melee range on your target.

In case of a shield, the shield block chance and damage reduction apply only if the shield is currently in your hands.

Weapon masteries only apply for the weapon that is currently active.

So if I have +420 Max Health in my shield masteries, when I switch to the other weapon, my Shield masteries are not longer active and my Max HP number visible on my health bar drops by 420.

When casting a spell from the weapon that is not currently in your hand, your character auto-switches to it just for the duration of casting that spell, and when the spell is done, it changes back. So in terms of weapon changing, it's seamless.

There is no noticable delay when switching weapons.
