Briefly, based upon the demo, there are three Savegame files, one for each of the three slots. In the Demo They were labeled DemoSlot1. DemoSlot2 and DmoSlot3. In the full game I assume they a\will be labeled Slot1, Slot2 and Slot3. They are located here:

Whichever slot that is being played, the Savegame for that slot will be auto updated at specific points in the game signified by the update icon showing for a second or so in the lower left hand corner. The player can hit ESC the Exit and the time since last save is shown. If that point is one the player might want to start again, Confirm the exit. Then go to the Savegame folder and copy the Slotn file and save it somewhere, in a subfolder. There the Savefile can be renamed, e.g. Slot2 01 At The Front Gate. Later, the current Savegame, Slotn, can be replaced with a copy from the Savegame subfolder and the game will restart at that point. This is similar to Syberia:TWB except here there are three Savegame files. All of this has to be done because that;s the way Microids chose to do it. I suppose they thought that only a few would want to replay various parts of the game, so they saved money by NOT including a Save/Load process. For me and others, I (we) will put up with the inconvience of managing Savegames outside of the game itself, as was done with Syberia 3, and Syberia:TWB. For savvy PC uses, it's not too bad but for novice PC users, their PC by default is set up so as to not evne be able to see the AppData folder and thus, the Savegame folder.
When the full game comes out, I hope to publish a guide showing how to manage Savegames as I did for Syberia 3 and Syberia:TWB. I have enjoyed these Benoit Sokal games/stories a lot and want others to do so as well.
