How do I make a good build?
Early game I'm really strong but then late game I fall off hard. Do I just need more experience?

Pretty much. You basically just have to jam pieces together until you understand how they all work in conjunction. Read the post round logs, figure out what is doing damage, what is healing, what works and what doesn't. A simple way for me to learn was to copy the builds that beat me, and force them to see how they worked. There is also a little tab above the shop you can scroll over to see the rarity % available for each tier. Items get more rare the higher the round, so determining the best rounds to roll for each rarity is a must.

But first I would recommend just trying to craft everything so your crafting page is filled out :)

As of right now, I feel like you can get some relatively easy wins by leaning heavily into the class items and things that synergize with them. Also there are items that are considerably better at the beginning of the game and fall off quickly in the mid- and late-game unless you craft them into something else. So, there will be a lot of games where you want to sell off items you relied upon in earlier rounds. By mid-game, you also probably want to have some form of reliable defense. The other thing you need to try to learn is how to build resources like mana or certain buffs that feed the abilities of items that are the best build-arounds for a lot of runs. I will also add that the newer classes seem very strong, so that might help.

what class are you playing and do you feel you die too fast or too slow??? if your going beyond like 15 sec fights you probably don't have enough dmg. if the fight seems to be over in 7 you probably don't have enough defense. also keep on eye on your stamina bar and what is using versus suppyling. block and regen can be good but seem to be weaker than vampiric for defense. try to have at least one set of armor unless your doing a glass build with ranger or berserker. pheonix and dark lantern can be really strong on the pyromancer. the reaper wants to either buff or debuff as much as possible. corrupted crystals can be really good for fatigue if you don't have a better use case. food is good early but tends to fall off late game so don't be invested unless you are doing a food/nature build. you really shouldn't need more than one thing unless you build calls for more. (i.e dagger/pyro/food builds). knowing your class items and how they work can win/lose you battles so experiment with different ones to find the ones you like. these are the basics for the game imo.
