Characters structures will always be there providing you save the game, if you have people play with you, make sure they save the game themselves before they leave, I think doing that will save their own inventory. I have been in a game and left, the host also left but the host saved the game, when we came back I had started from the beginning with nothing in my inventory. So I believe saving the game myself would have saved my inventory.
I haven't played ARK myself so can't compare The Forest to that, there are tons of bugs especially on multiplayer compared to single player, the natives AI isn't as bad as it used to be but it can be annoying if you play on a multiplayer server and you aren't the host.
Despite that The Forest is a great game and you can have alot of fun with it. It is still an alpha game like ARK, but with less people developing the game than those are on ARK, so it is moving a little slowly, but still a great game to play.

EDIT - Oh, the building can feel a little slow sometimes, I always find myself chopping tons of trees during the day but not at night, as there seem to be more natives out at night. Each tree you chop will give you 4-5 logs, and structures can take anywhere from say 12 to hundreds of logs to build a simple structure, to a more self designed/complex structure. There are plenty of things to build in-game so you won't be short on things to do.

It does, you hit co op, join and you get a list with all the servers and people in ( max 4 ).
