Quick and dirty: Peer to Peer. Can set up or join a server hosted by a player (or yourself) and that server remains open until the host leaves. Public peer to peer's are the fastest way to connect to a group of strangers and get going, but they are also the least protected kind of server. Between the server depending on the host to be active, and the trolling modders, don't get too attached to public peer to peer servers. Private peer to peer are what you would likely set up with a group of friends. Play privately in your own little world locked away from everyone else.
Long term: discord and dedicated. Discord groups for forest often cycle through games, or have multiple worlds under different hosts in the same group. Some will instead focus on a private dedicated server (public dedicated is a barren wasteland for the trolling modder reason mentioned above). Some instead focus on games in general, with a sub-focus on forest among many other selections. A dedicated server is meant to stick around, and as such, tends to have some goal to it. Sometimes that's just hanging out though.
Either way co-op discussions tends to be a good way to find others who would like to play. As for mic, it's not required unless the server requests it specifically really. Some prefer it, some don't (i personally dont like the in game walky talky...or my voice...). You can text chat, though its hard to defend yourself with a text box open. For walkie talkie, default keyboard settings are Q to bring out the walkie talkie in order to use voice chat in game. Some prefer doing VC over discord though since its clearer and doesnt affect the gameplay.
