Ok so I spent hours looking this up and testing it to no avail.
Then I did the logical thing and started a new game, and voilà, I could add booze to my stick.
Currently, booze doesn't go on my crafting pad with the upgraded stick at all. The only way I can make it last longer is to add more and more cloth (hence the suggestion).
So I probably have a bugged/gimped save, or the wrong inventory items when an update was implemented.
Thanks for your input Bossgamerjesse, I appreciate it and it helped to figure it out :)

BUT:
==> even with Booze the torch still does bugger-all when you're actually swinging it. It's maybe 4-5 more swings. My idea with "Pitch" was that you could add something to the Stick to make it last MUCH longer, but there'd need to be a significant cost.
Maybe combining enough Booze + Sap could craft an item similar to Sap that'd create a major boost to burn-time, and you could add it to any weapon that could be wrapped with cloth. A rare resource reserved exclusively (for instance) for caves.
It's just a matter of balancing it and making it seem legitimately important and useful.
I've always thought a way to prolong burning *melee* weapons was a great idea, but it's hard to think of how to implement it. Thus my post. Hope anyone considers it.
