He can be whatever he wants to be. Take it from the movie Gardens of Stone in which a character said, "some days the bear eats you. Some days you eat the bear." Meaning, it's better to be on top and eat the bear before it eats you.
Me, the sons o' b*tches that come after me gets what's comin' to 'em. I kill and eat the f*ckers, show 'em who's boss, then make a huge effigy because I damn can, and it pleases me greatly.
And to answer the OP: Yes, you can eat them. Just build a fire or a drying rack and you can eat cannibal limbs. Can't tell if there is a negative aspect to eating cannibals but cannibal flesh heals hunger quite a bit.
However...I wonder if, by eating a cannibal, might spell dire consequences further down the game. Maybe eating mutants you become a mutated, "devolved" cannibal yourself, and the game ends with you walking into a new airplane wreck to take the young boy.
I just got chills. I've been wondering the same thing.
POTENTIAL SPOILER:
While on the topic of story/motive, have you noticed the dead guys with croses and bibles sparkle (the dead near the iron doors)? Take a look again if you haven't noticed. THEY SPARKLE now lol
When you're covered in blood, it gives you the "wash off to avoid infection" message but currently there's no consequences for not doing that either. Obviously they mean to probably implement some ways to get sick later on. That makes me wonder if eventually eating the cannibals will make us a bit sick. Who knows! But for now, it's fine.
Right now there's no negative effect to it at all. It makes no sense to get sick of it, anyway, because, from a scientifical point of view, human flesh is just as healthy as the meat of any other animal. But I noticed that cannibal limbs don't restore as much energy, as animal meat (I think, even fresh ones. But I'm not entirely sure).
Almost pointless to hunt for anything else, but we still keep the meat racks full of fish and stuff, just in case. Honestly, there's an excessive amount of cannibal meat, so we also make tons of effigies.

Nothing is better than scaring the cannibals off by hanging the arms and legs and heads of their previous patrols showing them that I can play the same game they are.
So I ask you. Who fears who here? Are we fearing the cannibals or do they fear us?
they need to make the rest of the body edible too.
