The mode codes were basically difficulty settings before the game actually had difficulty settings so...yes. veganmode is basically peaceful, vegetarianmode allows enemies to spawn in caves and at night, meatmode sets everything back to default/normal, and then for the masochistic there is also rawmeatmode which is basically permadeath hard mode.
All of these are usually entered blindly at the main menu, and your title screen will actually change to reflect which game mode you are playing, like vegan turns the title card white and gives it a subtitle something along the lines of "an open world adventure" or something like that. Vegetarian mode changes it to red instead of the default yellow color for the title.
The old game mode codes mentioned back in 2015 do still work, though some of them are now just default settings available to you in the game (like we used to need a code to allow trees to regrow, or to turn building destruction off as well). The difficulty codes also still work.
For what is essentially peaceful mode you would blindly type "veganmode" while sitting at the title screen. There is no text box to enter it into or anything like that, but if it worked then your title card should change as well. For veganmode you should get:

For a gamemode that does allow enemy spawning, but only in caves or at night (note, enemies spawned at night will persist in the daytime) then you would instead use "vegetarianmode" in the same manner as described above. If that one worked you should get a title screen that looks like:

There is a permadeath mode as well but honestly even the "hardcore" players don't really bother to use it for anything other than deleting save files in the weirdest way possible. It's basically just normal hard mode but it deletes your save file if you die, regardless of how you die. If you really want to check it out the code for that one is "rawmeatmode"
If you ever need everything to just go back to normal, or maybe got your feet wet and are ready for the full challenge of the game, then typing "meatmode" at the title screen should set everything back to default. Note, this can also include resetting or disabling some lingering command effects that may still be persisting between saves if you do find yourself playing around with the console (but safety with console use in general is an entirely different topic altogether).
