Hello, I just started this game 5 hours ago. I have been looking around in caves for loot and goodies and I came across a cowman, what is the easiest way to kill this guy without me dieing?

Depends on what tech you have for yourself so far. A few fire arrows will do the trick to keep him burning, as will molotovs. If you have some explosives then that will also finish the job pretty fast. There is always secret option B that I regularly rely on, that is to run away, no shame in staying alive :P

Is his charge attack faster than you running? He's in a pretty open area in a cave so I just wanna know before I try running past him.

I'm not sure to be 100% honest, though I've not had any trouble so far in maneuvering him during a bow fight. I'm very new to this game too, started playing on Weds. He will certainly have issues chasing you around corners or down a tunnel at the same speed you can maneuver. Keep your axe up and blocked as you make the run past :) Fire will both agro him and distract him for a few seconds, even that from a campfire he runs into, so you can consider using that to your advantage too.

Set him on fire and hack at him with your best weapon while he's reacting to it... or wait for him to charge, roll out of the way, rush him and attack him while he's dazed from missing you... just think stampede, y'know?

just burn it, I burn every enemy and it always, ALWAYS works, doesn't matter wheter I use fire arrows, flare gun,flaming axe or molotov

Easiest way is climbing a rock or any elevated place where he can't go or reach you.
Then throw molotovs/bombs at him or [depending on the hight of your safe spot] you might be able to reach him with you weapon. Crouch if you need to.

If you want a challenge - play corrida with him. Straferun to left or right when he charging you and hit in the back while fatso standing there stunned. Keep some distance or simply jump when he bellybooming (or whatever this type of attck is called).

Yeah, thought so. I remember them saying a new big mutant was on the way, but I quit playing before it was developed.
