Edit: you seem to be playing singleplayer for now from the posts i've seen, but if you do get into multiplayer and want to keep your stealth build there's an oddly specific little issue you want to be aware of. By default, Q brings up the walkie talkie, which in multiplayer is how players would communicate with mics. What isn't often mentioned is that the enemies can hear the walkie talkie to (obviously they dont respond to what is said, they just notice you more easily while the walkie is active).
I wish we could have a stealth suit 100% a Warm suit and a bone armor suit .... that we could take on and off ... wooo hoo
You can't choose a specific armor piece to remove, and removing a damaged armor piece will outright delete it, but you can replace your armor at will if you have enough stocked up. Adding additional armor pieces will start replacing the ones you already have equipped, if those pieces are still at full health they will be returned to your inventory. Alternatively the warm suit takes up all the armor slots, so it can also be used as a way to entirely remove all your currently equipped armor if you have it, giving you a fresh start for what you want to wear. Unfortunately with how the actual armor works, a suit only works for the warm suit (which believe it or not, wasnt always a suit either, you used to be able to just wear deer skin like you would lizard skin instead as a solution for cold armor). warm suit offers no actual armor, just cold armor, so it does not take any damage on the players behalf and therefore has no actual health. The armor pieces however, do have their own health which will take damage for the player from most damage types. So when your armor pieces break, it might actually be accurate to say they "died" for you to live, as their health reached 0. While worn, the game tracks how much each piece has actually lost, which is part of why higher tier armors can take a variable amount of hits (while lizard and stealth are both so low in armor/health they usually break with a single hit). The player can only store pieces at full health though, hence why damaged armor gets deleted if removed.
Edit: adding this screenshot of the stat page showing full stealth armor + rabbit fur boots so its easier to understand what i mean if it was at all confusing:
