1b) I haven't done it in a bit but iirc you can type "vegetarianmode" while at the main menu to enable enemy spawning only at night. There is no real point to "veganmode" as it only allows cave spawning, but cave enemies will already be gone due to peaceful mode at the start so there would only be like 3 places in the entire map you could encounter enemies. If the cannibals still won't spawn you may have to enable developer console. To do that there are 2 parts, first is to ensure you have cheats enabled in your settings. Second is to type "developermodeon" at the main menu. You should be able to check that it worked by pressing f1, which should bring up the command box in the top left of your screen. Once the console is enabled you could try "setdifficultymode normal" to change the entire saves difficulty to normal, and then apply vegetarian mode. Or you can try "enemies on" to enable spawning again. If all else fails you can also try "resetallenemies" to kill all enemies currently on the map while resetting their AI for the new spawns.
2) If you do decide to start a new game instead, then yes, you can also enable and disable enemies at will through the console. That is simply "enemies on" to turn spawning on, or "enemies off" to disable spawning.
3) We can't give you directions from the plane spawn as the plane can spawn at a number of different locations each time you play. Best we can do is advise you to keep an eye out for landmarks and the resources near them. The most well known landmark would be the yacht beach, if you see the sailboat you are in the correct area. Near that area you can find old pots that allow you to boil water for clean water to drink. Another option are turtles, the shells can be used to collect water and they spawn in several places across the map. Other hydration solutions depending on the area you spawn would include berries or sodas. That or you can find aloe and just risk the infection from drinking unclean water, eating the aloe when you do get sick.
4) You can find the same cave where you get drug to when you die and get captured. The closest entrance is at another notable landmark known as "the main village" which is why they take you there when they grab you. It is the largest village you can come across so it is pretty obvious when you do manage to find it. The climbing entrance you can find there leads directly to the chamber you get hung up in when you die, and most likely you have already seen this village when you left the cave after being captured so I'm fairly certain I am not spoiling anything.

I will say I never found the in game map to be incredibly useful outside of cave exploration (and not for lack of map skills, I am quite skilled at orienteering irl), though everyone learns the game map in their own ways. What did help in my case was setting up color coded markers at points of interest like landmarks or cave entrances and just getting used to travelling between those points. At first it was confusing and a little annoying to have flags everywhere, but after a while you really do get a proper sense of direction in game and can figure out where you are and where you need to go from anywhere, at most taking only a few steps until you see something a bit more identifiable than just trees.
I actually only had the map for a moment, so I really didn't get a chance to use it; but, at this point, I figured anything has to be better than my current method of walking around until I trip over something, or find my way back to my base :).
Oh... and as to my RL Skills... Thank goodness for Road Signs :).
Before turning Cannibals back on I want to rebuild my base somewhere a bit safer (currently I'm on the opposite side of a lake from a Village... with 2 nearby cave entrances, and a Second Village a Stone's Throw away). So I've been looking for a spot that is close to the Ocean (for Turtles), Fresh Water (for Dry-Spells), a few Wild Life (for food and more)... and Most importantly, as far from Cannibal villages and Cave Openings as possible.
I thought I finally found a spot, but as I was making my way back to my current base camp, I came across another cave opening on the other side of the Pond to my campsite. Which brings me to my question:
Is there such a thing as a Safe Spot to build in this game?!? Or is it just about Fortifications? I've covered a lot of ground (though I did finally find the main village, and got my map and compass), but I haven't really found any spot that is like, miles from the Man-Eaters :).
I know I'm probably thinking too much about this; but those things scare the mess outta me :)... I'm more comfortable with Mindless Zombies :) - LOL!!!

There's also a few spots on the mainland that are mostly safe as well. Many of those are pretty isolated and easy to overlook, though a popular one is "safe beach" over near the main village. If you manage to refind the main village you'll notice there is a single hut a bit separated from the village and closer to the cliff, featuring a few ropes, some boar heads on sticks, and a few other goodies or notable features. If you are facing the ocean, you'd follow the cliff edge to your right until you find a spot where the terrain dips into a natural pathway leading towards the beach. That, would be this cozy little spot where enemies almost never go, though they can rarely fall off the cliff and end up down there (bonus points that one of the plane's potential spawn points basically overlooks this cozy little beach):

For safe beach specifically, there are a lot of nearby resources, in fact it's not at all far from the main village and it's also fairly close to the yacht beach, so you pretty much have all resources covered. As for dry spells, there are deer nearby to make a waterskin out of, and the main village also has several soda crates you can break open. iirc each crate has like 4-5 sodas in it, so you'll have drinks for a while.
Edit: oh right, safe beach also has a turtle spawn, it'd be over near the bottom right area of that photo. Just be aware they are turtles, they are slow to swim up to the beach sometimes and you can't see them in the water at night, so patience is your friend there. You can even vaguely see a shell or two I left behind in my own game.
I swam around, and got to the beach near the Yacht... I figured I'd make my way back to the cliff, and set-up a Temporary Camp to gather the needed supplies... Starting with the Ramp you had built; but I like the sound of the Crane even better; assuming it can take Me up and Down, as well as a Sled; that's more a question than a statement :).
Otherwise... 'Yes'... this spot is perfect for me. I didn't see any Turtles, but I arrived 'Just' before dark; then left right at Sun-Up. But either way; I figure once I get 5 Rain Collectors set-up, it won't be an issue.
