For the
it does indeed kinda move out of place sometimes, usually when building on something else, like custom foundation or something; you just have to left click instead of hitting "E" and see if the section is going to move and try to "snap-to" the edge of the foundation or floor. Unless you mean your walls are just plain moving when built?
For the roofs, you basically have to get 3 or more anchor points down on something like rock walls or custom floor; then once you have the basic shape you hit "E" to go to the height-selection part, raise it up to the height you want with your mouse then hit "E" again to finalize it
Well, the problem was that I was using the individual wall pieces, rather than the custom walls because the custom walls were trying to cover my whole foundation and I didn't want that. Apparently, the wall pieces no longer snap together and you can't build a roof on them. However, I did figure out that you can hit C to stop the custom walls from building around the whole perimeter of the foundation, so I just used those and was able to build a roof on it (sort of).
My problem now is that the roof doesn't seem to be functional. According to the wiki, custom roofs are supposed to protect you from the rain, but mine doesn't. I still have to build a fire and stand next to it. Probably because the roof is just some floating logs that don't appear to be attached to each other or to the walls. It also didn't fill in the front and back gables.
And to top it all off, the game is telling me I need to collect 11 logs for something, but I've completed the construction of everything that required logs...
Yeah rain has just been a general issue for a long time, they only recently finally fixed it not raining in caves; but it must be on the dev to-do list. Also read the wiki with a grain of salt
And it doesn't fill in the font and back gables because they want to let you have them open by default (I personally like the look and find it useful) or you can just close it in yourself using a few different techniques

Yeah this is another longstanding bug, just log out then back in and it should be fine :)
