For me they spawn in any location of other mushrooms randomly.
The most common spawn was under the lake that is on snow biome :D https://theforestmap.com/#922.8,-1086.0
You could also summon it with command

I found lots of those in the area south of the biggest enemy camp, on the southeastern part of the map. They're very small.
Many other mushrooms and plants spawn there too.
