Seems legit.
You need to press E on goose body BEFORE it lands into water.
He meant to build platform a little underwater (so they can swim on it) and kill goose there so it lands on platform.
Other option is to camp on stones/those wooden things and when goose is close to you take bow, jump, shoot it and spam E.
You can't hold head in water so you will need to spam E in order to take it on land.
I have been stalking gooses and found that they land in:

big pond next to village https://theforestmap.com/#73.5,1039.4 (I think you are talking about this)
croco lake https://theforestmap.com/#264.5,-392.1
They keep splitting and it's hard to catch them all ;c not sure if there is any other location
i said! best way is to build a platform over the pond. You shoot the animals shortly before they land and I THINK!!!! the geese lake is not the best location - they are flying around and we have not only one pond !!
