This "higher difficulty makes enemies less bullet spongy" narrative is a complete myth that was dispelled ages ago by STALKER fans. In fact, there is a chart you can find for this trilogy that outlines what exactly changes with the difficulty settings - just google it. The higher the difficulty, the more bullet spongy enemies become. And from everything I have read, this has not been altered in the Enhanced Editions.
As of what difficulty to choose - well, start with the hardest one, and you can adjust it mid-game. The game has quite a few frustrating moments due to poor game-design, but that's... original experience. If you want a good STALKER gameplay - you don't touch vanilla SoC / CS, you either play mods or at least vanilla CoP.
