If you want something a little different I'd suggest Invisible Inc which plays more like Xcom being turn based etc.
I would like to recomment Mark of the Ninja as well, but that game is probably M-Rated, I dunno.
Parenting....not understanding something, but banning it because you think its bad for your children.
Yeah, sometimes I have T rated games with worse content than some M rated games but still can't play some M rated games.
But the first 3 Thief games as well as the first 3 Splinter Cell games are extremely tame and personally I would let a 7 year old play them with no worries at all. In truth, the rating is just wrong for those games. Very wrong imo.
The reason Mark of the Ninja ( another one of my faves) is rated "M" is for CARTOON violence and cursing. That's it. Again, less than Styx.
Then there's Deus Ex : Human Revolution (stealth mostly but with boss fights) ...only thing I can think of is violence.
Batman series (stealth and all out fighting) "M' for violence, nothing else.
My point is this ... Most "M" rated games are only rated "M" for CARTOON violence. But would it be a game without it ? It would be, but then why not just buy a "walking simulator."

Also, for a different genre of stealth...completely different, there is the Silent Hunter series.
Just a few suggestions you probably were already aware of. Not all of them are "True" Stealth games but they have elements of stealth within them. One last thing .... any game that comes out today in this poltically correct environment is going to contain a "M" rating because everyone wants & needs to cover themselves from any kind of lawsuit.
Personally, Styx closest gameplay to absolutley any other game has to be Thief : Deadly Shadows .... it even has some of the same annoying bugs.
