I don't know the keyboard key, but on gamepad you can press a button to get off normally, or hold it to jump off (and glide afterwards if you so choose).

Dismount uses the same key for all mountable creatures. Tap it to step off, or press and hold it a moment then release to jump off.
There is a moment you might be making a mistake because you're not meant to dismount but press your duck/movedown to do something else it does give an on screen prompt for it though, that might be what your issue is.
