The unlimited option is actually not 100% accurate and this was also an issue in the Windows version. Please see the following thread if you wish to manually unlock this:

The file that you are looking for in the Linux version is through ~/.local/share/feral-interactive/shadowofmordor/appdata/WBgames/Shadow of Mordor
Please note that this is not an officially supported method, so any issues when using it would not be investigated, but we would not think there will be too many issues.
i am completely new to PC gaming in general but how do i go about entering that info to unlock the fps, ive got a GTX1080ti, i7 7700 CPU and a 4k moniter, thanks a bunch
