I have killed both Birds (rather early in game) and some smaller drake kind of creatures, so those exist and you can hit them with your bow. Maybe you need to upgrade your focus to also slow down time enough and use runes and ability upgrade to both slow down time, to increase focus (and reduce its depletion as it can be hard to target those flying objects). Make sure to fully charge to hit them (hold down left click until it gets red and the outer ringer is in the centre). If you only tap to shot an arrow they might not be killed.
When you hit them they will show a bright explosion which should register as a kill if they are the right type for your achievement.
Don't forget to look up in your Appendices (ESC) which have lore section where there is Nature (describing creatures and other things that are considered part of Nature in SoM vs people and enemies etc. With this knowledge you should be able to find out where those creatures can be or what danger they might pose to yourself or to other creatures.
