optimizing farm hands
hey! is it worth it to put farm hands to do anything but trees?

No, not really.
I have one with the needed flowers for honey, the shortest harvest time ones, mostly because I'm terrible at remembering to harvest those and then run out when I have a quest. Otherwise my farm hands are tasked with the juice and jam trees. I play a rather relaxed game though, so YMMV.

If you don't mind moving your farmhand once or twice during playtimes you can keep them busy all the time. Just takes some micromanagement. But it's one move every now and then as opposed to do everything youself. Though tractor will always be faster it might be handy to put them on stuff that are not needed for quests so job still gets done in background.
Whatever you're willing to spend the awards on really! However, trees are really the only relatively efficient way to use farmhands. I use 24 farmhands working golden apples, pear resources that harvest 3 out of 4 seasons, citrus resources that harvest 2 out of 4 seasons - and then have 1 farmhand working all of the production buildings. With about 40 production buildings, I can start the game and it will automatically match production with demand within anywhere from 30 to 120 minutes. (On the jam and juice buildings anyway.)

Using the farmhands on any crop that takes more than about 45 minutes is quite inefficient UNLESS you time your playing of the game to match when the crops are ready to harvest.

An interesting look at the opposite situation is when you have a farmhand working quick-to-harvest crops. A farmhand working lettuce (with sprinklers) can only get through about a 5 by 17 tile area before the crops are ready to harvest again!

It would be nice and more useful to be able to upgrade the farm hands to use tractors
