It depends on what you're aiming for, but with 10 of each type early on, it makes the quests pretty quick to finish (the ones that want you to harvest trees anyway).
I've only planted more of the spice trees and apples, pears and lemons for the production of jam and juice (I let farm workers harvest them).
Farmhands can service a 17x17 field of trees, so I just arbitrarily plant trees in their zones. When I'm able to upgrade the farmhand shop in town and can add another farmhand, I will add another field of trees. I'm currently level 116 (farmlevel)
The plant menu shows how many trees I have of each type. When I build a new field, I make a mix of trees I don't yet have, trees I need more of (which, again, is mostly apple and pear type trees) and lastly trees I didn't have many of at that point.
There is no calculation behind it. Some seasons a farmhand may stand still for most of the time because there are little trees to harvest, but at least I don't have to do the mind-numbing task myself.
As my farm grows, more fields of trees can be added.
I started out with mostly 18 of each (9x9 for tractor use)
