As to how many.. I believe they said either 20 or 25. You get the farm hand union (a building you place in town) and level it up to unlock more farm hands.
So far they're a lot of fun to play with!
I put them on trees as for me those are the most tedious to harvest. So many trees and often needed on quests so a nice thing to automate. Next I will be rearranging all the flowers and put farmhands on those as well. For now I think they're best served on static harvestables.
Once I get my storage upgraded plenty and have a sizeable storage for feed, animals will be next.
Maybe in between I put something for the short crops but sprinklers and tractor work perfectly fine for those where I am right now and I cannot control the quests I get and I don't want to micro-manage the hands much at this point.
All in good time.
