Otherwise, there's no real pressure. The initial professions you choose and your playstyle will affect how fast you progress. So, spending your days re-arranging your crops or making decorations and redoing your farm won't penalize you.
The time affects the NPCs. They sometimes wander at different times and go inside their houses / go to bed at a random time late night. Yes, it changes. Not to worry, in the full game the map shows where any quest related NPC is at the current time, just highlight the quest. It will also tell you if they're asleep with an icon.
Shops don't close, so buying and selling won't be an issue.
